January is usually a little bit slower for musicians so I've tried to enjoy this time and do all the things I usually wouldn't have time to do - Like baking, blogging, cleaning the house etc.. ;) Unfortunately going outside is not included in the list, just looking out the window makes you depressed, haha :D I'm super jealous of the Finnish weather of -25c at the moment.
But back to the topic which is delicious waffles! I love waffles, pancakes, and porridge. I follow the instagram of one of the biggest porridge brands in Finland (of course), Elovena, and saw this recipe of porridge waffles on their account. Straight away I was super excited, I mean waffles AND porridge, what are you kidding?! The recipe was a great success and I modified it only a little bit to match my diet and preferences. So hope you enjoy these lovely, healthy and super tasty waffles!

INGREDIENTS
- 30 gr Oat flour
- 1/2 tl Baking powder
- 1 tbsp (7gr) Hazelnut ground
- 1tspl Sweetener (xylitol, stevia, coconut sugar, honey)
- Pinch of salt
- Pinch of cardamom
- Pinch of vanilla
- 100 mll Almond milk (or other liquid)
- 1 Egg
- 5 gr Oil melted (olive oil, coconut oil)
- 200 mll porridge
INSTRUCTIONS
- Combine dry ingredients (flour, baking powder, salt, hazelnuts, cardamom and sugar).
- Mix wet ingredients (egg, milk, oil, porridge) together. Blend in the dry ingredients.
- Let the batter sit and swell for a few minutes.
- While waiting let the waffle iron heat up. Grease the iron. Pour batter into the hot waffle iron and fry until the waffles are golden brown and crunchy.
