I found this super simple recipe from a Finnish food magazine, and it was so good I just had to share it! I also added a tiny variation of my own to it. I always have coconut oil in my pantry and I use it a lot in cooking and baking. You hear recipes mentioning cocoa butter often when making raw chocolate, but you actually don't necessary need it at all. Other stuff in the recipe are also pretty basic things and would be found in almost everyone's food press all the time. Only "exotic" part is the Lucuma powder that can be found in the health aisle in the supermarkets. It is very lasting and you will get at least a years use of one bag. Lucuma gives the chocolate that creamy and soft texture.
Raw chocolate is a wonderful treat thanks to it's versatility. You can "tune" your chocolate according to your own taste. This time I made 3 different flavors; mint chocolate, hazelnut and plain chocolate with a hint of vanilla. The chocolate has a lovely creamy rich consistency and tastes heavenly!
