Delicious Berry Skillet Pie (gluten free, dairy free, sugar free, fat free)

I apologize for being so quiet on my food blog lately.  The musician caravan has been galloping fast so to say, and I haven't had time to test and try new recipes. I've got my act together now though and have a pile of sweet and savory recipes to share!

Here is a recipe I found from the ovely Hanna-Leena's blog. I've made this pie every morning for about a week now and just don't seem to get enough. I recommend to try the pie with different berries and combinations. My next venture is an Apple Cinnamon Pie. The pie is really filling and will keep you full easily until lunch. I like to grind the oats into Balfour but if that's not possible for you it works beautifully also with oat flakes. you can try the pie with following berries / fillings:
~Blueberries
~Blueberry-Lemon (add 1 tsp of lemon peel and 1 tsp lemon juice) 
~Raspberries
~Blueberry-Raspberry
~Strawberry-Vanilla
~Redcurrant
~Apple-Cinnamon



INGREDIENTS

  • 3 Eggs
  • 40gr Oats (ground into flour, whole flakes will also work)
  • 1 tsp Baking powder
  • 1 tbsp YesDeli carb free sugar (or other sweetener)
  • Splash of almond milk
  • 1 tsp Vanilla
  • Pinch of salt 
  • About 100r Berries

*Apple Pie Special Edition*

  • 1 apple peeled and diced
  • 1 tbsp sugar free apple sauce (from the baby isle)
  • Mix the apple sauce into the mixture. Cook the apples on a pan with vanilla, sweetener and cinnamon until the apples are soft. Fold the apples into the mixture and fry according to the instructions below. 

INSTRUCTIONS

  1. Heat a plate on medium heat (mine works at 3 / 6; 4 was too hot and burned the pie) 
  2. Whip the eggs
  3. Add the oats and baking powder 
  4. Add water / almond milk
  5. Add vanilla, salt, sweetener and other possible seasoning
  6. Pour mixture into a greased pan and cook first for about 5 minutes. Turn the pie and fry on the other side for about 2 minutes. If turning is difficult cut the pie and turn in parts. 
  7. Add more berries on top of the finished pie and serve with soy vanilla custard and good coffee!
