Waffles don't usually work with same recipes as pan cakes. So I've spent a lot of time trying and searching for good healthy waffle recipes. Mastering the fluffiness and crunchy outside of waffles is not easy, but now I've come up with a deadly recipe! You can even taste the lovely butteriness of waffles but without using any oil or butter :)
INGREDIENTS
- 50 gr Oats (ground in a blender)
- 15 gr Tapioca flour
- 20 gr Coconut flour (or ground desiccated coconut)
- 1 tsp Baking powder
- 1 Egg
- 200-250 mll Almond milk (or other fluid)
- Pinch of salt
- Pinch of stevia (or other to sweeten)
PREPARATION
- Mix dry ingredients together
- Add egg and almond milk
- Use the amount of milk according to get thicker or thinner dough
- Spray some oil to the heated waffle iron and fry until the waffle surface is hard
